Bakery owner offers new services

A baker apparently has found the ingredients for success since opening in Rocky Mount's busy northwest commercial and retail area the week before Thanksgiving.

Winde Jackson began serving customers in a brick-and-mortar location off Independence Drive. Now, Jackson's place, Winde Jackson Cakes and Catering, is serving lunches, has entered the meal prep service business and has entered the entree catering business.

Not only that, Jackson, who started at the location with five employees, now has eight.

Jackson said she had always wanted to have a bakery and a cafe and do catering.

"The bakery was No. 1," Jackson said. "But I had also waited to be able to have a place where people could come in and get healthy meals — and show the community that just because it's healthy, it doesn't mean it has to taste bad. It actually could be flavorful and taste good, too."

Jackson, 38 and a native of Rocky Mount, first worked in computers when she was younger, as a network technician for Web-Point Communications and in a server room for BB&T.

She said baking was a hobby, but she said after giving birth to her daughter, she eventually decided computer technology wasn't the career path she needed to remain on.

"And I made my hobby my career — and I've never been happier," she said. "I just feel like that's the gift that's the Lord has blessed me with, is being able to bake and cook for others."

She said she ran a home-based bakery for probably five to six years before eventually deciding if she wanted to expand her business, she would need to move away from working at her residence.

Jackson said she had been praying and said God answered her prayers.

"It was the right time," she said.

She found a space in a former Domino's Pizza location and opened after a few months of preparation.

"It has been great," she said of how business has been so far. "We've been blessed."

In addition to attributing her success to God and her belief in the Independence Drive location being her calling, she noted she had developed a following over time in the community.

"I think it helped a lot to have that business built up before we opened," she said.

Jackson’s bakery offers desserts such as brownies, cheesecakes, creme brulee, cookies, cupcakes, muffins and other pastries, as well as breakfast items.

Jackson’s bakery also prepares cakes for anniversaries, birthdays, weddings and other special occasions.

Jackson said the lunch menu includes salads, soups and healthy entrees.

She said the meal prep business is for people who need healthy meals for a period of time, people trying to become more healthy or people trying to maintain a healthy lifestyle.

She said the idea is to sit down with a client, discuss his or her diet and his or her needs and prepare meals for a certain number of days or for the week.

"And then all they have to do is just pop it in the microwave and heat it up. The cooking is already done," she said. "It's hard to always work a full-time job and come home and cook, so we like to be able to offer that service to them."

Winde Jackson Cakes and Catering is open from 6:30 a.m. to 5:30 p.m. Mondays through Fridays and from 8 a.m. to 2 p.m. on Saturdays.
